Is it possible to simply launch fleets from my different
planets to the same target to increase damage?

You can attack the same planet from different planets, but they will be treated as separate attacks even if they arrive at the same second. Furthermore, you cannot attack a given planet or moon more than 5 times in a 24hr period - this is called Bashing and is prohibited by the rules.
